Spring Rolls

Super easy, fun and healthy!! Who doesn’t know a kid who likes to eat with their hands?

1 lb of pork (I usually use shoulders but any cut will do)
1 lb of shrimp (cooked and deveined)
bibb lettuce, or any kind of lettuce
cucumbers – thinly sliced
carrots – thinly sliced
bean sprouts
cilantro, basil, mint (or any herbs you like, the mint is a great flavor)
vermicelli (rice noodles, cooked per pkg instructions)
bowl of hot tap water
rice paper

FOR THE DIPPING SAUCE:
1 Cup chunky peanut butter
1 Cup coconut soda
1 Cup hoisen sauce
chopped roasted peanuts (if using creamy peanut butter)
chili pepper sauce (optional)

Place first 3 ingredients in sauce pan on medium heat and stir until well mixed and throughly mixed. add the peanuts and chili pepper sauce (if using) and set aside.

For the spring rolls:
Cook the pork until done (boil or roast).  Then thinly slice and peel shrimp. Wash, cut and plate all veggies for center of table. Dunk the rice paper into the water.  I usually put the lettuce first then add any or all of the ingredients at the bottom of rice paper.

To fold, I fold the bottom half then the two sides then roll up as tight as I can up.  The less you place on the rice paper the easier it is to roll.  It can be hard to put so little though, so practice makes perfect.  You can subsitute tofu for the pork and even omit the shrimp.

This is a super easy and fun recipe that the whole family can get into.  You can even ask the kids what they prefer to put into their rolls. I have individual bowls of dipping sauce so you can even make that to your liking.  How easy is that?  If you try other ingredients with this recipe, please come back and let me know how it worked out so I can try it too.
