Sauteed Jumbo Shrimp

Have I mentioned that I love seafood?  Well, if not, here it is again.  I LOVE seafood!  Here’s a recipe that brings back many memories of my mother’s kitchen.  Asking my mother for this recipe required some skills on my part (not to mention, patience).  She’s one of those amazing cooks who never used a recipe in her life.  It’s all by taste and know how…a little bit of this and a little bit of that.  Well, I’m not that talented, but I did manage to come up with some measurements to make this recipe my very own.  My kids devoured it, too bad I only had eight shrimp.  I’ll remember to get more than a pound next time City Market has shrimp on sale.

Sauteed Shrimp

Sauteed Jumbo Shrimp

8 jumbo shrimps
2 Tbs fish sauce
1 Tbs of sugar
3 Tbs finely minced shallots
3 Tbs finely minced garlic
1 Tbs fresh lemon juice
3 Tbs oil (I used EVOO)
1 thai pepper julienned (optional)
8 scallions, cut 2″
1 Tbs butter

Peel shrimps leaving only the tail intact.

Mix fish sauce, sugar, pinch of salt, 1 tsp black pepper, 1 Tbs of garlic and shallots in bowl and add shrimp, toss to marinate. Place in fridge for 20 mins. To make sauce: mix butter, 1 Tbs oil and lemon juice, set aside. Heat pan with the rest of oil add the shrimps (without the juice from marinade, reserve the garlic and shallots)and cook for 1 min. each side.  Remove and set aside. Add sauce to pan on low heat, then add reserve marinade, simmer for 2-3 mins. Return shrimps to pan and remaining shallots and garlic, chili (if using) and scallions.  Toss for 2-3 mins more.  Serve with jasmine rice.
