Got Coconut?

Have you seen the explosion of different types of coconut water on all the grocery stores shelves? It’s a great substitute if you can’t get your hands on the real thing.  Although it is still hit or miss, I find that lately, our area grocery stores are more frequently carrying coconuts. I am talking about the young coconut itself, not the brown husked coconut, which is a mature coconut.

Benefits of Coconut

The benefits of coconut water are numerous.  It has been marketed as a natural energy and sports drink due to the high potassium and mineral content.  It’s super hydrating, low in cholesterol, fat free and very low calories. What more can you ask from a drink? There is an enormous amount of information out there about the benefits of eating coconut!  There is even a Coconut Research Center that lists just a few of the benefits here.

Not only is coconut water good for you, but it’s great for your skin too! We are mid-winter and most people struggle with dry skin this time of year. After just a couple of weeks of drinking coconut water, I saw a huge difference in my skin. Less dryness, and a smoother and brighter complexion.

Here’s how you go about getting to the water and “meat”.  You cut the point off with a sharp and big meat cleaver.

Turn it upside down over a glass to get the water out. Now chop it again in half to scoop out the white fleshy meat.
